Abstract
Artificial intelligence (AI) has revolutionized the agricultural industry by enhancing efficiency and precision in the cutting and sorting of fruits and vegetables. This chapter explores the application of AI technologies in automating these processes to meet the increasing demands of the food industry. AI algorithms, such as computer vision and machine learning, are employed to identify and classify various fruits and vegetables based on their size, shape, color, and other characteristics. By utilizing advanced sensors and cameras, AI systems can accurately assess the quality of produce and determine the optimal cutting and sorting parameters. Furthermore, AI-powered robotic arms and machinery are programmed to execute precise cutting techniques, ensuring minimal wastage and consistent product quality. These systems can adapt to different types of fruits and vegetables, increasing operational flexibility and productivity. The integration of AI in cutting and sorting processes not only improves efficiency and reduces labor costs but also enhances food safety by minimizing human handling. Future advancements in AI technology hold the potential to further optimize these operations, leading to a more sustainable and productive agricultural sector.
